It is not absolutely clear from the logs what could be happening. The following excerpt from DpkgTerminalLog.txt caught my attention:

It's complaining that /var/lib/ mysql/ibdata1 doesn't exist, and that's very likely the reason why the installation resulted in an error. Did you perhaps moved (or removed) files under /var/lib/mysql/? Do you have MariaDB (which causes a conflict with MySQL) installed by any chance? Can you post the contents of your /var/log/ mysql/error. log, please?
